Zucchini protein bread

  1. 1/2 cup egg whites

  2. 1/4 – 1/2 cup sugar substitute*

  3. 1 cup grated zucchini

  4. 1 scoop protein powder (mine is 120 cal a scoop and slightly sweetened)

  5. 1/2 cup oatbran*

  6. 1/2 cup oatmeal*

  7. 1/2 tsp vanilla

  8. shake of cinnamon

  9. 1 ts baking soda

  10. 1/4 ts baking powder

  11. 1 tb cocoa powder

Heat Oven to 325. Mix all together, let sit for a minute, spray a cupcake tin and try to divide mixture evenly between 10 of the cups (you can do 12 but it makes calculating calories a lot easier!). Bake at 325 for 15-20 minutes – this depends on what all is in there as to how long it takes to cook – I cut one open and made sure it was not runny/wet any any longer The texture of these was a little crunchy on top, pillowy on bottom from the eggs? I liked it – when I tried it with more protein powder it got more dense like a cake but I liked it this way better personally… The way I made it: 55 cal a piece, 6 gram protein (guessing about 7 carbs) *this recipe is pretty darn flexible – I tried it with oatbran/oatmeal and just oatmeal, tried it with 1/4 stevia and 1/2 stevia , tried with with 2 scoops protein powder instead of one – don’t be afraid of it! BUT remember to adjust your calorie count based on what you end up using*
